Ven Pongal
1.Rice - 1measure
2.Green gram (broken) 2-3 tsp
3.Ginger paste -1tsp
4.Curry leaf,pepper,cumin seeds,Cashew
5.Salt 2tsp
6.Ghee 4 - 5 tsp
a)Cook rice & gram in a cooker with 3 to 4 measures wateradd ginger paste& salt;After 3-4 whistles,cool it.
b) Add cashew to 2 tsp ghee & fry; add pepper & cumin seeds. add curry leaf.
c) add the above to the cooked rice ;mix well adding the extra ghee.
Charkarai pongal
1.Rice - 1 measure
2.Green gram (broken) 2 tsp
3.Jaggery - 1 measure
5.Cashew,Dry grapes& cardamom
6.Gee 4to 5 tsp
a)Mix jaggery with 1/2 cup water .Add peeled cardamom seeds.Jaggery must dissolve completely.Slow fire.Do not over heat.It must be semi liquid.Keep separate.
b)Cook rice & gram with 3-4 measure water in a cooker.After 3 whistles,let it cool.
c)Mix jaggery with cooked rice ,heat in low fire till the mix is a paste.
d)Fry cashew first& dry grapes next in 2tsp ghee.
e)Add this & remaining ghee to the rice mix and serve.
